Join the Pueblos del Maiz celebration as we embrace maiz (corn) as a staple ingredient in our culture and share how it connects our culinary heritage with other UNESCO Creative Cities of Gastronomy.
Chefs will utilize the Culinary Institute of America of San Antonio Outdoor kitchen space to provide an educational cooking demonstration using sustainable ingredients and share the impact climate change has on their local cuisine. As part of our Pueblos del Maíz celebration, chefs from the UNESCO Creative Cities of Gastronomy- San Antonio, Tucson, and Mérida will also incorporate maíz in their dish and share how it connects with each city’s culinary heritage.
